🍁Fall Nourish Bowl with Maple Tahini Dressing 🍁
(Serves 4)
For the Bowl:
1 small sweet potato, diced
1 cup (150g) Brussels sprouts, halved
1 cup (130g) cauliflower florets
1 tbsp olive oil
Salt + pepper to taste
1 cup (185g) cooked quinoa or brown rice
1 can (400g) chickpeas, drained and rinsed
2 large handfuls baby spinach or arugula
¼ cup (30g) pumpkin seeds or chopped walnuts
For the Maple Tahini Dressing:
2 tbsp tahini
1 tbsp maple syrup
1 tbsp apple cider vinegar
½ tbsp Dijon mustard
2–3 tbsp warm water (to thin)
Salt to taste
Preheat oven to 400°F (200°C). Toss sweet potato, Brussels sprouts, and cauliflower with olive oil, salt, and pepper. Roast for 25–30 minutes or until tender and golden.
While the veggies roast, whisk together all dressing ingredients until smooth and creamy.
Assemble each bowl with a scoop of grains, a handful of greens, roasted veggies, chickpeas, and a sprinkle of seeds or nuts. Drizzle with dressing and enjoy warm, or chill for later.
