
It’s pumpkin season! Suddenly it’s everywhere: in coffee, baked goods, candles, and even on front stoops…
And I have another place pumpkin deserves to appear:
In your meals!
Why? Because it’s loaded with fiber, potassium, and vitamin A… it's low in calories… and it has a sweet, creamy quality that makes it a delicious autumn addition.
Here are four easy ways to use it:
Stir it into oatmeal. Add a few spoonfuls of canned pure pumpkin, a sprinkle of cinnamon, a drop or two of vanilla, and some maple syrup to your oatmeal. Delicious!
Add it to a smoothie. Canned pumpkin blends easily with banana, almond milk, and vanilla protein powder. Best part: it tastes like dessert.
Mix it into chili (or beef stew). Pumpkin pretty much disappears when you stir it into chili or stew, thickening the base and adding a subtle sweetness, along with key nutrients. You can add about a half-cup toward the end of cooking time.
Use it as a pasta sauce base. Blend canned pumpkin with a little low-sodium veggie or chicken broth, garlic, and parmesan. Toss with pasta and top with sage or red pepper flakes. It comes together in about 15 minutes and tastes like a restaurant meal.
Canned pure pumpkin (not pumpkin pie filling!) works for all of these… no carving necessary!
