A fresh, new year means fresh, new recipes!
This Cucumber Avocado Salad is not only delicious, it also makes for a great snack or side dish.
And if you need a little protein kick, add some chilled, cooked shrimp.
The secret to this recipe is letting those fresh veggies soak up all the goodness of the dressing — so don’t rush this part!
Here’s your recipe:
Cucumber Avocado Salad
(Makes 4 servings)
Ingredients
¼ cup (15 grams) sweet onion, sliced thin
1 lemon, juiced
3 Tbsp extra-virgin olive oil
1 Tbsp each of thinly sliced fresh mint & basil
½ tsp pink Himalayan salt
1 cucumber, thinly sliced
4 plum tomatoes, seeded and diced
1 avocado, halved, pitted, and cubed
How to make it:
Toss the onion with lemon juice in a large bowl and let it soak for 10 minutes.
Add the olive oil, herbs, and salt—whisk to combine.
Add the cucumber to the bowl, tossing to coat well, and let it stand for another 10 minutes, gently stirring every few minutes.
Stir in the tomatoes, and then gently fold in the avocado.
Transfer to a platter, serve, and enjoy!
