One-Dish Chicken Sausage with Brussels Sprouts
(Serves 2 — double it for 4 meals)
1 cup (270 grams) peeled and cubed sweet potatoes, roasted
2 organic apple-flavored chicken sausages (like Aidell’s or Applegate)
1 Tbsp olive oil, divided
10 oz (285 grams) bag of shaved Brussels sprouts
Heat 1 tsp oil in a large skillet over medium heat. Dice sausages and cook until golden brown, 4-5 minutes. Remove and set aside.
Heat the remaining oil. Add Brussels sprouts and cook, stirring, 4-5 minutes until caramelized.
Add sweet potatoes and sausage; stir to combine. Season with salt and pepper, if desired.
Calories per serving: 343; Fat: 11g; Carbs: 43g; Fiber: 9g; Protein: 18g.
