So I thought, “What better time than now to share a recipe you don’t even need the oven for?!”
These No-Bake Coconut Almond Bars call for coconut butter (not to be confused with coconut oil)…
But if you can’t find it, you can easily substitute extra almond butter or use your favorite nut butter. It just won’t have as much coconut flavor!
Here’s your recipe…
No-Bake Coconut Almond Bars
(Makes 8 servings)
Base Layer:
1 cup (80 g) shredded coconut (unsweetened)
¼ cup (20 g) oat flour (grind rolled oats in a food processor or high-speed blender)
¼ cup (60 g) coconut butter
¼ cup (60 g) almond butter
¼ cup (60 ml) maple syrup or honey
¼ tsp sea salt or more to taste
½ tsp pure vanilla extract
Topping:
3 tbsp dark chocolate (80% cacao or higher) chopped
1 tbsp coconut butter
1 tbsp maple syrup or honey
How to make it:
Lightly grease a 9x5-inch (23x13-cm) loaf pan with cooking spray or coconut oil.
In a bowl, mix shredded coconut and oat flour for the base. Set aside.
In a small saucepan over low heat, melt coconut butter, almond butter, and maple syrup until smooth. Add vanilla and salt, then remove from heat.
Combine the melted mixture with the coconut/flour mix until it forms a ball. Press it evenly into the prepared pan and refrigerate.
For the topping, melt chocolate, coconut butter, and maple syrup over low heat. Spread smoothly over the base.
(Optional: Add dried cranberries for a festive touch!)
Let cool, and when it’s set, cut into 8 equal portions. DELICIOUS!
