One chicken, four meals, zero boredom

Meal kits can be super convenient, but I’ve got something even better for you today.

It’s my go-to chicken bowl formula… FOUR different ways!

It’s like a DIY meal kit, except not only will it save you $$$...

It will also give you control over the quality of ingredients (and portion sizes) of your meals.

Plus… my favorite part… it lets you experiment with new flavors and keeps your healthy meals from getting boring.

All it takes is a batch of cooked chicken breast, some carbs (rice, quinoa, etc.), veggies, and dressing.

First, cook up a few chicken breasts using whatever method works for you.

Then, slice, shred, or cube your chicken and you’re ready to assemble your bowls.

Mediterranean Chicken Bowl

Serve 4-5 oz. of chicken over greens or quinoa, sliced cucumber, halved cherry tomatoes, red onion, and a spoonful of tzatziki or a drizzle of olive oil and lemon. Add feta if you have it.

Asian-Inspired Chicken Bowl

Serve chicken over rice with shredded cabbage, edamame, shredded carrots, and a drizzle of sesame dressing or coconut aminos. Top with sesame seeds and green onion.

Tex-Mex Chicken Bowl

Layer the chicken over rice or greens with black beans, corn, salsa or pico de gallo, and avocado. A squeeze of lime pulls it all together.

Classic Herb Chicken Bowl

Toss the chicken with roasted vegetables, a drizzle of olive oil, and fresh or dried herbs. This one is simple, hearty, and satisfying (perfect for an autumn lunch!).
